Stuffed Hand Grenades

I created a new dish tonight, using small, round zucchinis.  I only made a small amount because it was an experiment, but it was extremely tasty.

Stuffed Hand Grenades

3 small, round zucchinis (about the size/shape of a large tomato)
1 small onion, chopped
2 minced garlic cloves
oil for sautéing
2/3 cup Texmati rice uncooked
½ cup crumbled feta cheese
1/3 cup dark raisins, cut in half
½ tsp. dried thyme
1 slice ham or prosciutto, cut into tiny pieces
Preheat oven to 350.  Cook rice in 1 1/3 cups of water or chicken broth.  Wash zucchinis, dry, cut off tops.  Brush outsides and insides with oil and place in shallow baking dish with some oil in it.  Carve out innards of zucchinis and chop finely.  Sautee zucchini, onion and garlic in some oil for a few minutes.  Add to cooked rice, then add in ham, feta, thyme, raisins, and salt and pepper to taste.  Blend well, fill the open zucchinis with mixture, heaping way up, then put tops back on.  Put extra filling in foil and bake along with the zucchinis for about a half hour.  You can turn the heat down and go longer; these do great just sitting in a warm oven.  Delectable!

    Sounds and looks great. Where does one get round zucchinis?

  2. Hey Pat! I got them at Deercrest Farm Market which is on Hebron Ave, about three miles east of the 83/94 intersection. It’s on the left as you start to come down the hill, JUST after you pass the soft right of Marlborough Road. They have excellent produce and are lovely people. However you may be able to find these odd zucchini elsewhere…I’ve just never noticed them before.
