“Oatmeal Raisin Cookie” Muffin Tops

20140621-104934-38974809.jpgThese were deemed fantastic and filling. The recipe, which I invented this morning, will make 9 muffin tops (or 18 regular-sized muffins).

Preheat oven to 350 degrees with convection; 375 without. Grease and flour two “muffin top” tins.

Combine dry ingredients:

1/2 cup Quaker oatmeal
1/2 cup sprouted flax powder
6 TBSP white flour
3/4 cup granulated brown sugar
1/4 tsp salt
2 tsp cinnamon
2 tsp baking powder

Combine wet ingredients:

1 egg
1/2 cup milk
3 TBSP canola oil
1 tsp vanilla extract

Add wet ingredients to dry ingredients, blend well, then add 1 cup raisins.

Divide mixture into nine compartments in muffin tins, bake for approximately 15 minutes. Be careful not to burn the bottoms!
